Riževe palačinke brez glutena

PALAČINKE

Sestavine za 2 osebi:

  • 9 žlic riževe moke,
  • 5 žlic drobno mlete kokosove moke,
  • 10 g pecilnega praška iz vinskega kamna,
  • ščepec himalajske soli,
  • 1 banana,
  • 1 -1,5 dcl kokosovega ali mandljevega mleka,
  • 2 jajci (vegani lahko nadomestijo s chia ali lanenimi semeni, ki se predhodno namočijo, da želirajo, ob tem pa povečajte količino tekočine po potrebi),
  • 5 gramov izbranega sladila (npr. agavin ali kokosov sirup).

S paličnim mešalnikom zmešamo na koščke narezano banano, kateri smo dodali kokosovo mleko. Prelijemo v večjo posodo, dodamo 2 jajci, majhen ščep soli in izbrano sladilo ter zopet premešamo. Počasi dodajamo moko in pecilni prašek in sproti vmešavamo.

Maso pustimo vsaj uro v hladilniku, lahko pa tudi čez noč. Ne sme biti tekoča ampak srednje gosta. Čez noč se še malenkost zgosti. Raje naknadno dodajate tekočino po potrebi. Naredite preizkus z eno palačinko. Palačinke pečemo na kokosovem olju, na srednjem ognju, na vsaki strani dobro minuto do dve. Ko se naredijo mehurčki na hitro obrnemo palačinko.

DATLJEV NAMAZ

Sestavine:

  • 10 datljev,
  • manjša pest praženih lešnikov ali mandljev,
  • 1,5 dcl vode,
  • 3 čajne žličke bio kakava v prahu,
  • žlico kakavovih zrn ,
  • 5 žličk kokosovega olja (stopljen).

Datlje najprej za kratek čas namočimo v vodo, nato jih narežemo na manjše koščke, dodamo v blender ali dober sekljalnik skupaj z oreščki, dodamo 1 dcl vode in dobro premešamo, da dobimo datljevo pasto. Nato dodamo kakav, kakavova zrna in olje, premešamo, in potem dodamo še preostalo vodo. Gostoto si lahko prilagodite tudi po svoje. Postavimo za minimalno 10 min v hladilnik, da se malce strdi in kasneje namažemo na palačinke.

Vmes namažemo še kokosovo smetano in dodamo dodatke po želji. Jaz sem tokrat izbrala maline, kokosovo moko in pražene mandlje.
